Prawn and Avocado Salad with Lemon Dressing

Ingredients
- 300g watercress
- 300g large prawns, peeled and cooked
- 2 avocados, peeled and sliced
- 150g frozen green peas, cooked
Lemon dressing
- 2 teaspoon grainy mustard
- 1 teaspoon clear honey
- juice and zest of half a lemon
- 4 tablespoons olive oil
Method
- Wash and drain the watercress and place in a large bowl
- Add in cooked green peas along with prawns and slices of avocado
- In a separate dish whisk together the ingredients for the dressing and drizzle over the salad
